I love pumpkin and couldn’t believe that this gluten free dairy free pumpkin pie pudding could actually be… healthy! But it totally is and will delight anyone who’s looking for a yummy dessert without all the gluten-free junk.

Ingredients
- 2 Cups Coconut or almond milk
- 1/2 Cup Coconut palm sugar (or cane sugar)
- 1/4 Cup Kudzu
- 1 Cup Pumpkin puree
- 1/4 Tsp sea salt
- 1/2 Tsp Pumpkin pie spice (adjust to taste)
Instructions
- Combine milk, sugar, kudzu, and puree in a medium sized pot on the stove.
- Over medium heat whisk continuously until mixture begins to boil. Do your best to break up all the chunks so that the pudding thickens as it becomes smooth.
- Add salt and spice (to taste).
- Pour pudding mixture into ramekins.
- Place in the refrigerator until cool and firm.
