How about some Gluten Free Dairy Free Pumpkin Pie Pudding?  Of course you’ll have some!  Like you, I love ANYTHING pumpkin!

My partner-in-crime & co-host for the Gluten-Free Sugar Cleanse (Heather K. I love pumpkin and couldn’t believe that this gluten free dairy free pumpkin pie pudding could actually be… healthy!  But it totally is and will delight anyone who’s looking for a yummy dessert without all the gluten-free junk.

This recipe is really easy to make and can be made in advance of a party!  You can easily make single-serving ramekins or cups so that everyone sticks to a reasonable amount (though I’m willing to bet you’ll get requests for seconds and the recipe!).

Ingredients

Instructions

  1. Combine milk, sugar, kudzu, and puree in a medium sized pot on the stove.
  2. Over medium heat whisk continuously until mixture begins to boil. Do your best to break up all the chunks so that the pudding thickens as it becomes smooth.
  3. Add salt and spice (to taste).
  4. Pour pudding mixture into ramekins.
  5. Place in the refrigerator until cool and firm.
