Why it’s best to make your own Italian Pork Roast
One of the things that Jennifer, Founder of Gluten Free School, has always noted about her transition to living gluten-free was how much she missed the Italian family favorites (like Italian pork sandwiches). Initially she felt like she was breaking up with her Italian heritage and family over food, but with time, she’s been able to reclaim much of the flavors she feared were lost by learning to cook.
Making recipes like this one at home can be key to regaining normalcy that many lament when making the gluten free switch. Especially when many restaurants that make “authentic” Italian food add wheat flour to recipes that don’t typically call for it. Jennifer found out that the restaurant that’s been the winner of the best Italian pork where she lives adds flour to their Italian pork. However her mom started making this recipe after this discovery so that Jennifer could enjoy this favorite again.
That’s why Jennifer wanted to share this recipe with you… from her family to yours! And we love this Italian Pork Roast not only because it’s delicious, but because the slow cooker or Crock Pot makes it so easily. Plus the non-gluten-free folks will love it just as much and can easily enjoy the shredded meat in a sandwich with the traditional topping of roasted peppers.

Ingredients
- 1 2 to 3 lb pork roast (shoulder roast, boneless. If you use bone-in "butt" pork roast, increase cooking time until meat is tender and easily comes off the bone)
- 2 whole garlic cloves (peeled)
- 2 bay leaves
- 1/2 tsp cracked black pepper
- 1 tsp fine sea salt
- 1 tsp fresh rosemary (can add more for added herb flavor, and for garnish when serving)
- 1/2 tsp garlic powder
Instructions
- In a small bowl or with a mortar and pestle, combine sea salt, pepper, garlic powder, and fresh rosemary. Mix well and rub all over the pork roast.
- Place the roast skin side up in slow cooker with 1 inch of water. Add 2 bay leaves and 2 whole cloves of garlic, peeled.
- Çook on high for 3 to 4 hours for a boneless 2 to 3 lb cut (though cooking time will need to be increased if you use a cut of pork with the bone still in). Remove the bay leaves.
- Slice with a knife or shred using two forks working to pull the meat apart. Enjoy!

Alternate Tip: If desired, make 2-3 deep slits in roast and insert the garlic.
